Cauliflower Salad

Finished Cauliflower Salad.

One of my very good friends Meredith gave me this recipe when I was living in Maryland. I can’t even remember what we were doing, but I’m sure it began as one of the many conversations we have about life and food. It was an odd combination that I couldn’t believe tasted any good, but by golly, every time I bring this recipe to an outing, people go crazy for it. It takes very little time to throw together, cooking the bacon is the longest part. I do hope you enjoy one of my easy, go to recipes for the entire year.

Cauliflower Salad


1 medium sized head of Cauliflower

1 1/2 cups of Roasted Shelled Peanuts, preferably unsalted

1 pound of Bacon, do not use maple flavored

1 package of Frozen Peas, thawed

1/2-2 cups of Ranch Dressing

Salt and Pepper


Preheat oven to 350 degrees and bake Bacon on a cookie sheet. Once cooked to a crisp, remove from heat and place on platter lined with paper towels to remove excess grease. Set aside to cool completely. Crumble into bite sized pieces.

Rinse Cauliflower and chop into small pieces, placing into a large bowl.

Combine the remaining ingredients including the Bacon. Add enough dressing to thoroughly coat mixture adding more as needed. Mix until all ingredients are sufficiently incorporated. Season with Salt and Pepper to taste.

Time to dig in after all that hard work!

One last thing to note. Eating excessive amounts of this stuff will increase your fiber content immensely. I’m not going to spell it out, hopefully you know where I’m going here. Far too many of my friends have learned this the hard way. But enjoy!!!!
